(DIY#1) 金鼠年自制“黄金”酵素

各位酵友,

过年大家家里一定有很多柑(金), 应该吃不完吧?以其浪费,不如把它用来做“黄金”酵素吧。

材料
柑 (任何种类的柑都行) 1.5kg

糖 (片糖 或 冰糖)1.5kg-1.6kg

我用的是印度黑糖 。 如果您用片糖, 4 包大概是1.6kg , 糖比柑多一点没关系。

做法如下:

1 。把柑皮剥掉, 留下果肉, 分成4份。

2. 把糖 也分成4份。

3. 用已洗净晒干的玻璃瓶 。

4. 先把1份的柑肉铺在底层。

5. 再铺上1层(1份)的糖。

6. 重复 4 和 5 至全部4份的柑肉和糖用完。

7. 最后1层一定要是糖。

8.不要太满,留下 空间。 (照片中我做的的确是太满了)

9.把盖稍微盖上, 不需太紧,讓 酵素可透气。

10. 放在干燥阴凉及没有太阳晒的地方,大概4星期后,如果味道甘香,没有黑色霉菌,把渣滤掉就是我们的 金鼠年自制黄金酵素了 !

11. 制好的黄金酵素放在冰冰箱保鲜, 饮用时把3汤匙黄金酵素加入1杯水。

P/S: 酵素放得越久,酒精含量多, 所以如果不想酒精含量高,早点喝吧,大概2星期应该OK ! 如果不行我还有方法。

    Just making sure I read correctly. So all we add is just sugar and citrus oranges? Do we add any water to cover it up?

    As it looks like the jar is filled with water in the last picture.

    Yes, just sugar and oranges. no water needed in this method. All of the tools must be clean and dry as well.

    I tried this today and the oranges formed some tiny black spots, I take it this is a bad thing? :/

  4. If the black spots are black mould then you have to discard the whole thing.
    Make sure your hand tools and oranges’ skin are free from water after you wash them.
    Can put a little extra sugar on the last layer of the sugar.
