(DIY#10)酒浸黑枣梅子

这是适合老人家,产妇(不是孕妇),馋嘴鬼和酒鬼的零食。 每次食2一3粒,能健脾开胃、敛肺涩肠、补血活血。这道酒浸黑枣梅子需要多做,因为不管你做多少都不够吃的 !

材料
黑枣(乾) 1.0 kg

绍兴花彫酒 640ml  1 瓶

酸梅 20 颗

冰糖 500g -1 kg (可随意)

做法如下:

  1. 把玻璃瓶洗净烈日下曬乾 ,黑枣和酸梅不可潮湿 ;
  2. 先把一半的冰糖放入底层;
  3. 再把0.5kg 的黑枣和10颗酸梅混合放入瓶中;
  4. 再铺另一半的冰糖;
  5. 再放入另外 0.5kg 的黑枣和10颗酸梅混合放入瓶中;
  6. 最后倒入1 整瓶的花彫酒;
  7. 最后一层不需要是糖, 因为是酒浸不是发酵;
  8. 把蓋子蓋緊,不必透氣;
  9. 放在干燥干凈及没有太陽曬到的地方,大概3-4星期后,如果味道甘香,没有异味,就是我们的酒浸黑枣梅子了 !

注:市面卖的黑枣可能是用火烘干的,有一股烧焦味,令成品味道大打折扣, 买的时候先闻闻看。

    这不是发酵所以不必放越久越好,只要黑枣吸收了糖和酒的味道变得又软又湿嫩就可以了。

  9. 我终于做了.不过却用了2瓶酒.因为我的的罐太小,我把800g的黑枣分成2罐,结果1罐需用1瓶酒才能盖过黑枣………..这么做对吗?

  10. 其实等糖溶化后,酒会就能盖过黑枣,不过没关系,酒多了可以拿来干杯,味道应该很好。

  12. 都快两个星期了,铺底的冰糖还没融化,造成还有1/4的黑栆没有浸泡在酒里. 1KG 的黑栆挤满了整个罐,我天天摇晃也没用,请问是不是等酒完全浸泡了黑栆再等一个月才可以吃?

    方法1:找另外一个罐,把1/4没有浸泡在酒里的黑栆,移过来另外一个罐的底层,全部移位。够甜的话,没融化的糖不管了,再等一两个星期。

    方法2:找另外一个罐,把1/4没有浸泡在酒里的黑栆,移过来另外一个罐的底层,而有浸泡到的黑栆可以试试味道了,如果已被酒浸泡软了,味道又不错的话,可以找几个朋友把它解决掉了。 剩下的酒就倒入那1/4没有浸泡到的黑栆,再等。够甜的话,没融化的糖不管了。

    这不是做酵素不会发霉的。

  14. 我倒换了瓶子,到今天24天了,我试了可是黑栆完全没入味, 也没有吸水后稍微膨胀的样子,还是干巴巴的 , 看来还要浸泡更长的时间, 是这样吗?

    我上面7月20日做的都还没吃,你的要等多2星期吧。你买到的黑栆会不会太干?试试用汤匙按一按,看看会不会加速入味,但不会膨胀到像蜜饯酱软的噢。

    黑栆是浸泡到入味, 太干下次你可能要稍微剖开,对不起没有想到你买到黑栆会那么干。

    confinement women can take enzyme made of ginger (old & young), lemon grass, fresh basil leaves and a few lemons. Put all ingredients (sliced) in a bottle and add the same amount (weight) of brown sugar on top. Close the bottle lid loosely so that the air from fermentation can escape. Shake the bottle a little everyday for the first few days and the enzyme should be ready after 4 weeks.

    黄酒没用过,应该可以只是味道的问题。浸过了的黑枣酒已没剩下多少,喝掉、烹饪都可以。
    黑枣的种子要不要去除都可以。便秘吃【酸奶】吧。
    老人开谓应该喝姜茶或【银发酵素】也可以。
    酵素保健主要是坚持,种类应该以黄梨,木瓜,柠檬为主,其他你可以随意加入。老人酵素则加温补类如姜等。

  20. Thank you. I tried it, it was so successful, just 3 weeks, the taste was fully absorded by 黑枣. Too bad is my 黑枣 was 用火烘干的,so有一股烧焦味,but the taste still not bad. But not dare to eat too many, scared will gained weight~!! Haha Once again, thanks a lot~!!

    你怎么换了个方式问我同样的问题?我只好也换了个方式来给你同样的答案了。
    不放柠檬,水分会比较少, 但有些人说产妇不可以吃酸,看你啦。
    姜和香茅,对产妇有益。

  25. 剩下的酒可以加在下次的黑栆没问题, 花雕酒RM3.99 到 RM11.90 都有, 品牌和品质不同.

    I read with interest yr black dates soaked in this wine. I fact I love dates, either red or black. I eat 3 -6 red dates (depending on the size of the dates) everyday before dinner for quite some time already. It can help me to filll-up some of my stomach. When during dinner, I don’t have to eat too much. In this way, I think dates can really help us to slim down when we eat it at the right time. Red/black dates are also good for our blood , esp ladies.

    Well, I have made a small bottle of the black dates soaked with wine for 10 days already. Just about 500gm ‘cos the I can’t find a bigger bottle. Still awaithg for the harvesting time to due. Will comment later when I taste it.

    I hope you like it, anyway the only set back is most of the red/black date are from China and we have no idea how they dried it, not that I want to discriminate against China goods, it just that we heard too much of the scary stories. So be cautious.

    U r right regarding China goods and also thanks for yr good advice. Besides China, which countries are producing dried red/black dates like the ones I’m eating? Any idea?

    I should make a correction here, is the person that handle the product/process that’s matter. Product from other country may have the same problem. Unfortunately I don’t have a solution/recommendation for you, maybe it is safer if you can find a truly organic product.

    I had harvested the black dates. The taste is very nice & I love it. I took out the softened black dates and put in another glass container. With the remaining wine solution, I put in a new batch of dried black dates.

    Now I can eat black dates with a new flavour. TQ for this wonderful recipe.
