(DIY#8) 银发酵素 Homemade Enzyme for The Elderly

虽然父亲节和母亲节已经过了,但还是要献年老的长辈,这一瓶可祛风消炎,帮助消化的酵素。 孝顺的儿女们也可以花点时间来做这一瓶酵素送给年老的父母,总好过每个父亲节和母亲节带他们去吃一些原来是自己喜欢吃,可是却让老人家难以消以化的大餐吧。

材料 Ingredients:(适合大 HORLICK 瓶)

凤梨(黄梨)(500g) Pineapple 500g

木瓜 (500g) Papaya half fruit  500g

西洋芹菜 3 根 Celery 3 stalks

柠檬 2粒 Lemon 2 pcs

姜 200g Ginger 200g

香茅 200g  Lemon Grass 200g

片糖,黄糖或其他不是精致糖类 1.5kg  Brown sugar or other unrefine sugar 1.5 kg

做法如下:

  1. 把所有水果,姜及香茅 先洗净凉干刀、玻璃瓶及其他的工具,洗净烈日下晒干 。
  2. 凤梨和木瓜去皮、剖开、去籽留下果肉,切薄片;
  3. 西洋芹菜和柠檬连皮切薄片。
  4. 姜拍扁切薄片。
  5. 顺序把姜、香茅+糖、木瓜+西洋芹菜+糖、凤梨、+糖
  6. 最上1层要是糖。
  7. 不要太满,留下 空间。
  8. 把盖稍微盖上, 不需太紧,讓酵素可透气。
  9. 隔天,糖溶化后,可用干净的汤匙搅一搅, 讓酵素平均发酵,也可省略不搅,但要把罐摇晃一下,这动作持续一个星期左右。
  10. 放在干燥干净及没有太阳晒的地方,大概4星期,如果味道甘香,没有黑色霉菌,把渣滤掉就是我们的自制“银发酵素 ”酵素了 !
  11. 制好的酵素放在冰冰箱保鲜, 餐后饮用时把2-3汤匙酵素加入1杯冷水。

凤梨里的凤梨酵素 (bromelain) 的好处太多了,鳳梨酵素的三大功效— 抗發炎、提升免疫力及溶解血栓

木瓜里的木瓜酵素 (papain)能同时消化蛋白质、淀粉和脂肪;有治疗肠胃炎、消化不良等疾病的效果, 而且星洲日报养生大讲堂的陈骏说:在自然界中,最好的防癌酵素就是木瓜酵素肋』

西洋芹菜 (celery) 性凉、味甘。含有芳香油、VP及多种维生素、多种游离氨基酸等物质,有促进食欲、降低血压、健脑、清肠利便、解毒消肿、促进血液循环等功效。实验表明,芹菜有明显的降压作用,其持续时间随食量增加而延长。并且还有镇静和抗惊厥的功效。

(Ginger)中的姜辣素进入体内后,能产生一种抗氧化本酶,它有很强的对付氧自由基的本领,比维生素E还要强得多。所以,吃姜能抗衰老,老年人常吃生姜可除“老年斑”。 生姜的提取物能刺激胃粘膜,引起血管运动中枢及交感神经的反射性兴奋,促进血液循环,振奋胃功能,达到健胃、止痛、发汗、解热的作用。姜的挥发油能增强胃液的分泌和肠壁的蠕动,从而帮助消化。

香茅(Citronella)治疗风湿效果颇佳,治疗偏头痛,抗感染,改善消化功能,除臭、驱虫。

Method:

  1. Wash and dry the fruits, ginger, lemon grass & celery and dry under shade. Wash and dry the container, knife and chopper board under direct sun light.
  2. Peel the pineapple & papaya skin, cut each into small slices.
  3. Slice celery and lemon (with skin).
  4. Lightly smash and slice  the ginger.
  5. Divide all the sugar into 3 portion of 500g each.
  6. Put all into the bottle follow the sequence : ginger & lemon grass +sugar 500g,  papaya & celery +sugar 500g, pineapple +sugar 500g (top layer must be sugar)
  7. Leave it over night and then try to shake/tilt the bottle a bit so that the juice can wet the remaining of the sugar and melt.
  8. Pay attention during the first few days. You can stir the whole thing with a clean spoon so that it mix well. make sure the mangoes cubes is moist most of the time at least for the first week.
  9. Leave it in the dark clean place for at least 3-4 weeks. Raising the temperature to about 40-45 degree C can actually  help to speed up the fermentation process , if not just leave it .
  10. After 3-4 weeks, filter and transfer the juice into a bottle. keep the juice in the refrigerator .
  11. Add 2-3 tablespoon of enzyme juice to a glass of water (at room temperature or colder) , drink 2-3 times a day after your meal.
  12. Enjoy !

  6. when i made fruit enzymes i didnot put a lot of sugar because i afraid the enzymes will be very sweet.Normaly I made dragon fruit with pinapples but the result is not very good as it didnot produced a lot of liquid.
    The recipes which you given for all the homemade enzymes wt. including the skin of all fruits or wt after peeling the skin of fruit.
    I hd taking fruit enzymes for about 3 months I hd lost some weght and my hair hd stopped falling quit a bit. I don’t know whether you hd any fruits enzymes that help to stop hair falling and lost weight.

    The purpose of using sugar is for osmosis, preservation & prebiotics.
    Osmosis- the water from the fruits and vege will be forced out.
    Preservation- bad bacteria cannot survive in sugar.
    Prebiotics – Bacteria need sugar as their food to live & reproduce.
    Even if you put more sugar, the bacteria will consume the sugar sooner or later, you just need to give the bacteria some time if you dun like the sweet taste. To me it is too risky to make enzyme with low sugar proportion, especially when you do it homemade-ly. Unless, you are very very confidence with the hygiene issue during the process.

    Enzymes exist in all parts of the food & vegetable, including the skin. But most people make enzyme juice with all the skin peel off, nicely cut & arrange, put in nice looking bottle and finally they want their enzyme to taste good, not too sweet not too sour……. Nothing is wrong with that though.
    I have a different approach, I just want to make good & healthy enzyme, sometime the taste is a bit adventures, sometime a bit bitter, some time astringent, sometime it even taste like durian. Whatever the taste is, it is all come from the ingredients that you have put in ….fermented by the friendly bacteria. The more ingredients you put in, the more type of enzyme you will get. that’s why I did not peel the skin off for most of the fruits. I plan to put in the pineapple skin in the near future. Anyway,you need to strike the balance between the heaty & cooling ingredients, for an example you do not want to put in too much ginger bcos too much of ginger can be heaty.

    Anyway, you should try the “排毒保健美容 ”酵素 “. In summary, the homemade enzyme helps your digestion system, so that your body can concentrate on producing metabolic enzyme & strengthen your immune system and make you healthy. Once you are healthy, you won’t have to worry abt your hairs and weight anymore.

  8. if I want to make bitter gourd enzymes for diabetes patient should I add lemon or not?
    To prevent the enzymes to be too sweet so I have to ferment it for how long. Is there any vegetables or fruits should I add this to make it suitable for diabetes patient to drink.

    yes you can add lemon/pineapple to bittergourd. If you want to reduce the sugar contain you can let it ferment for 3 to 6months . Taste it before you harvest, it should taste sour like vinegar when the sugar is fully fermented.

  10. We hd alot rambutan in jb.Can I made enzymes with rambutans or not? Do I hv to deseed the rambutans and add lemon and sugar. can u adv me please.

    Never tried before but I think it is possible, if you can make sure you will not contaminate the fruits when deseeding. Add some lemon and slightly reduce the sugar bcos the rambutan already sweet.
    Rambutan 1kg: Lemon 200g: Sugar 600g (I just estimate only)
    Make sure you cover the top portion with sugar.

    I had made pineapple enzyme without put in lemon, and just add brown sugar, the amount of my ingredient is without weighing, just based on estimation.
    So is it ok to consume after fermentating for 2 week? The taste i get is sweet and got smell of alcohol.
    what is the purpose of putting lemon?
    This was my first time making enzyme, i’m very interested in your topic and it is really useful to me. Please advice

    Where do you put the lemon slices in your sequence of layering the ingredients and sugar? Pineapple & lemon & sugar?

    Rule of thumb is to put juicier fruits on top so that the sugar & juice can flow down and soak the drier ingredients. Lemon is usually use because the acidity can prevent bad bacteria from growing. Sugar is place on the last upper layer as preservative.
    So the sequence is usually like this(from bottom to top):
    ginger/lemon grass > pineapple > lemon > sugar > REPEAT ginger/lemon grass > pineapple > lemon > sugar

    Or

    Ginger/Lemon Grass > sugar >pineapple > sugar > lemon > sugar

  17. Hi, stumbled upon your site. Have known about enzymes for some time cause saw the books in Popular Bookshops but have not made or tried any as the books are in Chinese and I don’t know how to read Chinese.

    Anyway, thank you for typing out the instructions in English as well. May I know what are the enzymes used for? Can use for washing face/ hair as well? What kind of benefits will it bring? Thank you.

    酵素会有一些糖, 如果你担心糖份,可以让它发酵久一点(2-3个月),变得有点酸才喝。不然 kefir 或 yogurt 也是不错的选择。
