(DIY#7)自制“排毒保健美容 ”酵素 Homemade Detox Enzyme

上星期,很感谢 XE 买光了我大半的酵素,现在库存的酵素所剩无几,所以又是重新补仓的时候了。

以往都是做单纯的黄梨、木瓜、柠檬酵素, 但买的人可能觉得单调,所以决定把制作的材料丰富化,做一种适合年轻男女,具有排毒清肠、养颜塑身的酵素。

材料:(适合大 HORLICK 瓶)

甜菜根 半个(250g) Beetroot half (250g)

西洋芹菜 3 根 Celery 3 stalks

番茄 600g Tomato 600g

胡萝卜(大)一根 Carrot 1 pc

大黄瓜(大)一根 Cucumber 1 pc

凤梨(黄梨)250g Pineapple 250g

木瓜 250g Papaya 250g

苹果 3粒 Apple 3 pcs

柠檬 2粒 Lemon 2 pcs

姜 50g Ginger 50g

糖 (片糖 或 印度黑糖)2kg Jaggery or other type of sugar 2 kg

做法如下:

  1. 把所有水果及蔬菜先洗净凉干(不可晒);刀、玻璃瓶及其他的工具,洗净烈日下晒干 。
  2. 木瓜,苹果、柠檬 ,去皮、剖开、去籽留下果肉,切薄片;
  3. 甜菜根西洋芹菜胡萝卜大黄瓜切薄片.
  4. 番茄剖开小块。
  5. 顺序把姜、西洋芹、木瓜+糖、胡萝卜、苹果、+糖、大黄瓜、凤梨、+糖、甜菜根、柠檬、番茄、+糖。
  6. 最上1层要放糖。
  7. 不要太满,留下 空间。
  8. 把盖稍微盖上, 不需太紧,讓酵素可透气。
  9. 放在干燥阴凉及没有太阳晒的地方,大概4星期后,如果味道甘香,没有黑色霉菌,把渣滤掉就是我们的自制“排毒保健美容 ”酵素了 !
  10. 制好的酵素放在冰冰箱保鲜, 餐后饮用时把2-3汤匙酵素加入1杯冷水。

个别蔬果的益处如下:

甜菜根 (Beet Root) – 吴永志博士把它称为生机饮食界的超级明星, 含有丰富的钾、磷、钠、铁、镁、糖份和维他命A、B、C及叶酸B8 (Biotin) 可以激发胰岛素分泌,强化葡萄糖分配,并帮助消化;甜菜碱(Betaine)可以加速胆汁分泌,帮助疏通肝血管阻塞;锌酶素(Zinc Enzyme) 可治疗脂肪肝。二甲化醋酸(DMG),可防止心脏病。还有甜菜根中的天然红色素B12和优质的铁质是妇女与素食者的天然营养品。

西洋芹菜 (Celery) – 是保持身体最佳的食物之一,它能中和体内的钙质和酸性的物质,同时还能清血,防止心律不定、减少坐骨神经、风湿痛、痛风的疼痛。

番茄 (Tomato)- 番茄的茄红素是出名的抗氧化成分。

胡萝卜(Carrot)- 含有高达四百九十多种的植物生化素,被称为『穷人的人参』。

  4. Most of the homemade enzyme still contain sugar thus not suitable for diabetes patients, unless you are certain that your homemade enzymes free of sugar.
    Anyway, some of the experts CLAIMED that Oligo (寡醣)is suitable for diabetes patients, thus there are plenty of homemade enzyme lovers out there who is very fond of making enzyme using oligo.
    I use only NATURAL ingredients in my homemade enzyme so oligo is NOT an option for me. You can find out what is oligo & how it is made and then make your own judgment.
    Anyway you can CONSIDER using other type of probiotics (OTC) or homemade yogurt. you can google “probiotics and diabetes” for more information.

  5. Thanks for your reply. Your explanation is very clear. Another question would like to ask, according to your info enzyme drink must put in the fridge after 3 weeks. Can I
    take out it after fridge? How to make sure is freshness?

  6. if you do not want to put in fridge you can keep in a cool , dry & clean place away from heat & sunlight. But if you already put in fridge you have to keep refrigerated until you finish whole bottle. You just cannot put in the fridge for 2 days and take out for another 2 days and put it back in fridge again. Water due to condensation may drop into your enzyme.

    I have no idea what happen, most probably you have put in rotten fruit or maybe you did not close the bottle lid properly. Anyway, it is too late now but you can use it as [Garbage Enzyme] after fermentation for 6 mths.

    材料一定要新鲜不一定要跟足,大概放是可以我的只是供参考。
    次序是多水的水果在上面。

    拍打再切,效果更好。
    收成了的酵素,如果你担心可以放冰箱,慢慢喝。

    我不是醫生也不是中醫師,恕我沒資格回答醫療方面的問題。我只是想提供那些已經知道酵素是什么,想用酵素來做保健的朋友,如何用天然材料來DIY來自制酵素,自制的過程由于牽涉到有酒精的產生,所以可能對肝臟造成負擔,所以如果你想用酵素治病的話就要你自己多斟酌。我也明白你對老人家的孝順,但酵素畢竟不是萬能的。
    我倒是建議你向醫生問問關于Probiotic 方面的保健,至少 Probiotic 能幫助老人家的腸胃健康,只要腸胃健康,健康問題也可以解決了一半了。Probiotics 其實是包含多種益菌,但你要找個比較用功和開通的醫生或藥劑師問問,一般不長進的醫生可能會對 Probiotic 嗤之以鼻。

    据说以下蔬果相克,请问您这“排毒保健美容”酵素的搭配经过发酵后是不是就不会相克了?谢谢。
    水果+胡萝卜 (同食容易患甲状腺肿。)
    番茄+胡萝卜 (维生素C 丰富的食品搭配合吃,就会把维生素C 破坏。)
    番茄+黄瓜 (黄瓜中含有维生索C 分解酶,同食可使番茄中的维生素C 遭到破坏。)
    芹菜与黄瓜相克:芹菜中的维生素C 将会被分解破坏,降低营养价值。

    吳永志醫生的蔬果汁食譜也不談你說的相克。還有王永汉博士的XP-180御元素也是運用多種材料,讓益菌相互競爭以得到最強的180+種益菌。
    所以,沒錯,我是傾向這個原理。

    i have not heard or read anywhere abt carrot … but i do on radish (bai luo bo) …
    and abt tomato … i only come across u not supposed to use unripe tomato … it is recommended to use red n ripen tomato …
    most of the time the 相克 is mostly fruit / vege with meat n seafood … not so much btw the vege n fruit …
    i too read tommy wu’s book … on vege n fruit therapy … very informative … a very good eye-opening book …

  23. 如果每种蔬果都有它们的习性和功能,负负得正;正负得负,那当中有相克的也不奇怪,我曾吃了花蟹和柑大年初一在医院吊点滴,叔叔也曾喝了鲜奶和橙大泻。

    谋些蔬果的配搭若只是维生素C 遭到破坏那还好,只怕会引发其他病状,我只是想了解蔬果经过发酵后相克的习性是不是不存在了(完全没有恶意)。

    我认为发酵前与发酵后是两回事,就如牛奶与酸奶/kefir 之间的不同。
    当然海鲜与维生素C的相克是有所闻,但我在想如果‘生’海鲜(Sashimi) 和 ’生‘植物(橙汁)会不会跟你的‘熟’花蟹和柑的结果相同呢?

    p/s:来这里的朋友都是没有恶意的,志在讨论心得,就如发酵后的蔬果,有的只是益菌。

  25. 哦。。。这就是我提出问题向您求证的目的,因为我记得您曾说过蔬果经过发酵后“不好的特性都会变成好的”,那么说发酵后的蔬果是不会产生相克的,这可以让大家对酵素更有信心也增加了酵素的好处。(小女只是求证并非恶意质疑您的配方和您对蔬果酵素的专长)。谢谢。

    我今天看到这[网站], 看看你的点滴是不是因为花蟹的“寒性”加上其他如冬粉之类的寒性食物而引起的腹泻?

    Recently my mum introduced me to enzymes, telling me about the benefits of enzymes and stuff but I’m really put off by the smell of the garbage enzyme that her friend gave her.

    After reading your blog I realise that there are different enzymes for different problems.
    Do all enzymes smell bad or are there any enzymes which smell/taste better and can be used for slimming and applied on the face to treat blemishes?

    not quite sure abt the garbage enzyme ur mum got from her friends …
    i always think the word garbage gives a very bad connotation n misleads the public … i prefer to use the term “eco-enzyme” … i think it is a fairer description … hahaha …

    no doubt we use the left over fruit peels for eco-enzyme … it by no means smells bad that will put ppl off … it shld still smell fruity … mayb with some vinegar’s sour smell … esp if we use a lot of citrus fruit peel … the end result is very fragrance indeed …

    technically the same principles apply to both types of enzyme ie for consumption and cleaning … with some variations of course :
    for eco-enzyme … we use 3 kg of fruit peels + 1 kg of sugar + 10 liter of water … ferment for 3 months … vs … enzyme for consumption … we use the ratio of 1kg fruit of ur choice + 1kg brown sugar for newies … (u may reduce the sugar at a later stage when u are more experience ..) n ferment for 3 – 6 weeks … (again u may vary the fermenting period depending on ur taste buds … but definitely not less than 2 weeks )

    for new hand … why not try single fruit enzyme … pineapple is always highly recommended … cheap n good … success rate is always high …

    I just made my very 1st enzyme! – Lemon enzyme. I used raw organic cane sugar though. Hope it will turn out good.

    My mum used the leftover lemon peels and brown sugar to make enzyme for cleaning the house. Haha. Wonder it will turn out good also.

    你好, 我大概是3-4个月前,根据你的recipe做了‘排毒保健美容酵素’,非常好喝。才喝了一个月左右,缠了我多年的每月一次的偏头痛,好像好了,至今已两个月没发作了!好高兴哦!真的要感谢你!很想知道,你是怎么样想出这样的combination?目前我全家都在喝,一有机会就向人介绍,还免费复印recipe给人呢!我现在做酵素做上瘾了。

  36. 你叫我试,我就乖乖地试!Wow! I ended up using three 2.2L jars!!!! Imagine the kelam kabut I went thr to find the 3rd jar immediately! Phew! They were filled to the brim but fortunately they are sinking. A few days later, I will combine these 3 into 2 jars only.

    This is my personal experiences for the ingredients weighting, and is always very well fit for any container, no access no less, after 1~2 days all the sugar melted there will still have some space for the fermentation :

    The total ingredients 60% of the container + The sugar 70~100% of the total ingredients.
    If the container is 3 litre, the total ingredients is 3X60%=1.8kg + sugar 1.3~1.8kg 🙂

    And I think it is not adviseable to combine the enzymes, this may cos contamination.

  39. My husband and I have been drinking my pineapple and lemon enzyme for 2 months. We both gain some weigh. I don’t know if it is caused by the sugar that used to make the enzyme. My husband’s cholesterol and triglyceride are both high. Can he still drink the enzyme. Will it lower his cholerterol and triglyeride or it will raise them. Please give me some suggestion. Thanks…

    Both your husband & you probably need to review you daily diet or other habits which lead to the cholesterol and triglyceride problem. Research had shown that vitamin D deficiency maybe the cause, others (including Dr. T.Colin Campbell) suggest animal-based food is the culprit. So I don’t have a Yes/No answer to your question, you need to change you other life style to solve your problem, drinking enzyme alone will not help much. If you are willing to change your life style , together with the enzyme (or kefir or other probiotic) will definitely improve your digesting system and if you have a good digesting system you will not have those problem anymore.
    It took years to bring you to this stage so you cannot expect the problem to go away overnight, perseverance is the key but you should start right now.

    enzyme yang awak maksudkan ialah eco-enzyme yang digunakan untuk tujuan pembersihan? Ianya tidak akan rosak walaupun dibuka atau tidak, ianya sedia digunakan selepas 6 bulan. Kalau bahan melebihi 3 kg , harus ditambahkan gula supaya nisbahnya kekal 3:1:10 liter air. Kalau dah terlambat, tengok saja keputusanynya, kalau baunya busok maka gagal lah, tetapi masih boleh digunakan sebagai baja tumbuhan selepas dicairkan.

  44. 一般只有加黄梨时会多泡, 没泡也不代表失败, 试试味道吧, 失败的酵素是难以入口的.
    等你做熟练后, 糖份可以开始减少, 但不要少过 1 : 0.5, 因为会增加难度和风险, 维持在1比0.7 左右是比较容易做的.

    不 必 太 在 意 多 还 是 少 泡 沫 啦 。。。
    要 确 定 酵 素 是 否 成 功, 最 好 的 方 法 就 是 用 我 们 的 眼 舌鼻 来 鉴证。
    通 常 成 功 的 酵 素, 色泽 好 看, 清 透: 味 带 果 香; 口 感 酸 甜 。。。
    反 之, 失 败 的 酵 素色泽 难 看, 臭, 应 该 是 进 不 了 口 的 。。。

  49. im a new trainer. i did lemon enzyme at home. well, now is the 4th day. i saw some of the lemon on the top of my container look like “poison” .. how come become like this? should i throw it?

  50. this Enzyme need to use 干净的汤匙搅一搅, 讓酵素平均发酵,也可省略不搅,但要把罐摇晃一下,这动作持续一个星期左右,主要是避免浮在上层的果肉接触到空气的害菌而发黑霉。???? need ? need to stir ?
