    黑霉是黑色的,像长在浴室那种,可能有长点毛, 我的印象有点模糊,因为做那么久,只长过一次,但是几年前的事情。

    You dun really need to sake it like milk share, you can tilt the bottle a little, just make sure the fruit on top is always moist (by the sugar liquid).
    Alternatively, you can use a spoon to stir, make sure the spoon is dry and clean.

    黑霉是黑色的,像长在浴室那种,可能有长点毛.但我的是白色的有长点毛,可否饮用。

    白霉只要在制作時搖一要瓶子,白霉就不會再現了, 可以飲用。

    All of the answers can be found [here] and [here].
    Q1. During the first few days especially, you need to take care of your enzyme , you cannot put it aside and leave it for 30 days unattended.
    Q2. Not shake it like the milk shake, chinese word 搖晃 better describe the real action . The lid has never been close tight.
    Q3. Again go visit the above 2 交流区
    Q4. If you cannot finish the enzyme syrup, don’t do too much. If you still cannot finish, don’t do it anymore, becos most likely you dun like it that’s why you cannot finish it. Make sense ?

    My 6-cup-rice cooker is too pathetic – too small to store a reasonable size stainless steel pot. I would like to know where else I can put the pot overnight. Thanks.

    BTW, my unfinished syrup was my first attempt and I did it for two weeks only. The alcohol content is too strong that I am always drunk after I drink 15ml of it (mixed with water). 醉醉的感觉真的很难受!: (

    Which link is not working?
    Not necessary must use rice cooker, you can put any where (warmer place preferred) actually.
    All enzyme diy using my method will eventually has some alcohol especially when the lid is tightly sealed.

    My first question was can small kids age between 1-6 years drink it and if always drink any harmful to small kids?
    Second question was how many month can keep it beside 1 month? And we have to drink one stright go or can devided into many times? Any expired date for it?

    I follow your recipe to make green/red applie enzyme, beginning look ok, but yesterday i go n check has some white worms waik up n down, i fell sad donit know can continue or not pls advise me or it direct can make the eco-enzyme , how ?

    My another bottle no worm but the fermentation not so evident because “bao bao” not
    much, this success or not?

    You can give it to your kids, follow 凡夫俗子 recommendation, body weight 10Kg, take 10ml a day; 20kg take 20ml a day,….. you can also try the [Yogurt] & [Kefir] recipe, kidswill like it , I’m sure.
    You can keep it for quite a long while depends on how and where you keep it. Not quite understand the second part of the question.

    I really don’t understand where the worm come from (or it is the white mold ?) You can go make eco-enzyme with it. no choice.
    Fermentation is not purely judge by the amount of 泡泡.

    A1: Try to estimate the sugar & fruits’ weight then follow 1:3:10 formula. Take out the worm if you want.
    A2: Good, nothing is wrong.

    在冰箱里可以它可以放到你喝完都不会坏. 每天可以喝不一样的酵素, 补充不同的菌种.

    i have read another book that mention the bottle need to close tide, cover with the plastic to avoid the air enter the bottle. But refer to your book mention don’t close the bottle tide, let some air in the bottle.
    I have refer to another book, and try the tomato enzyme, but have white mold a lot after 4days, it’s save to drink, base on the book the tomato enzyme only need 1 week ready to serve. but your need 1 month…which should i follow.

    Hi elise,

    If you have bought Thomas’ book, why don’t you just try out his method. After all, you will only need 1 month to see the result.

    I used the same method as Thomas for more than 1 year and I never ever fail, not even once.

    It’s ok to gain more knowledge by reading more books but when come to practise, you just have to stick to one way until you become more confident, then only you make variations. Is that ok? :)

    as the saying goes : if u follow 2 sifus … its like u hit a t junction … u need to decide to turn right or left …
    if u follow 3 sifus … its like hitting a y junction … u have 3 directions to decide which one to go …
    if u follow 4 sifus … u are at a cross road … u have to decide whether u gonna hit north ??? south ??? east ??? or west …
    if u follow many sifus … u come to a round-about …. u go round and round … finally u get lost …
    since u have bought thomas’ book …. why don u just follow his method le ??? at least u wont get lost la …. lol ….

    嗨 ashley 。。。
    用你的眼舌鼻帮助你辨别你的酵素是否已经变质了 。。。
    如果你的酵素的颜色看起来还蛮清晰透明的话 。。。
    味道还蛮清香,还有果香味 。。。
    口感是酸酸甜甜的 。。。
    那你的酵素应该还没变质吧。。。
    不过最重要的还是你可以过的自己心理那一关吗 。。。
    如果是觉得怪怪的 。。。 那就不要勉强自己了 。。。把它拿去作花肥吧 。。。

    我刚刚开始学做酵素-柚子酵素和甜菜根酵素,现在只是第四天。其间我也有看其他的书籍,就像elise所说很多不一样的方法,搞到我都头大了。不过看了那么多网友都说跟着做就对了。我也感觉信心加强了。不过还是有点疑问。

    1。是否每天都要打开盖子让它呼吸?
    2。每天都要摇晃或用汤匙搅拌吗?

    水果去不去皮,都没关系, 一些人要吃水果渣或担心农药所以去皮,去不去皮都不影响发酵, 但果皮有果皮的酵素,所以根据你买的水果卫生条件,你自己决定.

    我做葡萄,辣椒和其他酵素都是去种子, 因为种子会影响发酵, 所以这也是我不做龙珠果酵素的原因.

    Roselle 是一种红色的水果, 中文叫洛神花, 长得像花, 但其实不是花是果, 只用红色部分, 有种子部分不用, 原因如上.

    我上个月做了葡萄+青苹果+lemon (24/08),青苹果+lemon (24/08),火龙果+龙颜干+葡萄+Oligo 900+花蜜 (25/08),tomato+Oligo 900+花蜜 (25/08),芦荟+pandan+Oligo 900+花蜜 (02/09),green tea+lemon+片糖 (02/09),还有一瓶是芒果+片糖 (07/09)

    我想试试不一样的酵素所以做了这么多。不过有一些分给亲戚朋友们试。tomato 的很好喝,很多人试了都喝不出是 tomato。

    我还想试试做一些比较可以减肥或消脂作用的。只因为我比较喜欢吃煎炸和油腻的食物。不知您有何推荐 ?请提供详细份量。

    我听我朋友说(一个读营养学的):酵素不可以长期食用 (因为人体本能会产生酵素,如果长期依靠食用外服酵素了之后,人体所产生的酵素会逐渐减少,久而久之便不会再产生酵素。那么,就必须依靠食用外服酵素直到老。。。。死。。。) 不知是不是真的?

    我不是什么营养学家医生之类的专业人士 。。。 只是凡夫俗子一名 。。。
    不错 。。。 我们的身体是会制造酵素来帮助消化和排毒 。。。
    不过跟着年岁的增长 。。。 再加上长期服用抗生素, 精制食品,垃圾食物,环境污染等等因素 。。。 我们身体的酵素贮备会大大的减少 。。。
    外服酵素能帮助身体消化食物 。。。 让身体能专心制造代谢酵素来作排毒代谢的工作 。。。加强身体的免疫系统 。。。
    如果没有外服酵素的辅助 。。。 我们身体就会忙着制造消化酵素,没多余的空间来制造代谢酵素了 。。。 久而久之,我们的健康就会亮起红灯 。。。
    anyway … this is only my 2 pennies worht of thought … please do not quote me … 一笑 。。。

    如果卫生条件好,方法对的话是可以收藏蛮久的,但酵素是做来喝的, 不是做来收的,干嘛要弄到三年五年?

    It is up to you, if you use organic pineapple and you want to include the skin then the weight is with skin, nad if you want to remove the skin then the weight indicated in the book is without skin.

    黄梨 + 青木瓜的酵素, 你可以用水果比糖 1 比 1 ;或低至 1比 0.7.

    等两三个月后发酵得有点酸才采, 酒精会少一点,但这並不代表100% 无酒精的.
    酿制瓶里的”食物”有限,不可能永无止境培养越来越多的益菌, 不能说是越久的酵素功效就越好. 酵素的功效好不好是在肚子里证明不是在瓶子里证明的.

    Nowaday to cari makan also tough le. Lots of people want to cut my road. Joyful gotto go on sea now, since no more road to walk on the ground…haha.

    I even go oversea to promote the book le while I was doing some blog commenting the other day, the blog owner is kind enough to allow me to put an ad there for the book…heh heh. He started to diy enzyme now, harvested the first batch and did the second batch liao. I hope he will frequent this place.

    Hi,Thomas,

    I just harvested the latest batch of enzyme, it is 1-month old and I opened the cap every other day to reduce alcohol content. Now the new batch tested sharper, and more sour, and the alcohol content does not decrease and I think I am more drunk!
    The smell of the enzyme upon opening of the bottle is almost the same as the 3-wks old, so what is your diagnosis of my enzyme? or is it because there will be individual difference, no 2 batches will be the same?

    1. Most dried fruits do not have any good bacteria left, so not suitable for enzyme fermentation.

    weiwei,
    you can use any type of lemon that you like of course local fruit has better energy that suit you and the [food miles] is shorter as well.
    Glass bottle is the best choice but if you just want to keep it in the plastic container to bring along with you when you are traveling or going out for a short period of time, then it is OK. In fact, some of the leading brand [enzyme product] from Japan are packed in plastic (probably high-grade plastic ) for convenient & economically purposes.

    The 300g of aloe vera in the aloe vera n pandan enzymes is with skin or without skin? I weighed 300g of aloe vera with skin and after peeling the skin n put it into the jar then I realized that I might have made a mistake because it looked so little.The content only filled up half the 1.5 liter jar. Can this consume this enzyme? Another enzyme that i tried is the green tea n lemon enzyme. I used the green tea leaves (Long Jing Cha) that I bought from China but it seems the tea had absorbed quite an amount of the water when i boiled it because after i seived the leaves out, the amount of tea left was very little. Or do u mean i no need to seive the leaves out and pour in the whole lot instead? I feel very sad please help!

    Better if you sieve the tea leaves out, actually you just need to do it just like how you prepare green tea for your guess.

    两个星期前,我尝试做了洛神华木瓜酵素。因为你写的食谱份量太多了,所以我把份量给减少。前第一个星期,我有给它搅一搅。后来两天后,我忘了搅。发现水果上面长了一点点的黑霉,赶快把黑霉拿掉,然后再加上几片片糖。直到现在都发酵得很正常,也有再搅一搅。请问,是否还可安全食用?有一点担心。

    all carbohydrates … once broken down become “sugar” …
    so diabetic patients have to be careful intake of carbohydrates … like rice, bread, cookies, cakes … of course table sugar …

    有些人坐月子吃麻油姜酒鸡,饮用养命酒及Dome 也在喂奶;原则上,如果你担心就不要喝, 任何食物如果你心里觉得不妥,吃下去对你也不会有益处的,对吗?

    Now there is still sour smell, my husband complains whenever I stir the liquid. Will the bad smell disappear in 3 months, or can I do something to improve it now ?

    It depends on the sugar ratio, if the sugar ratio is too low the whole thing may turn into rotten smell. Or maybe the smell is normal is just that your husband doesn’t like it.

    I had harvested my Kefir milk twice, and it is very successful, pls tell me what

    My Japanese friend taught me diy Yogurt by directly add in the yogurt into the
    milk (straight pour out from the packet), without boiling, will this any harmful??

    I wonder whether you can answer my question about yogurt. Can I blend the yogurt with the dregs of enzymes such as pineapple which contain sugar? I understand that any sugar contain stuff is not recommended to add into yogurt. My sis is always complaint about her bloating stomach, can her problem be solved by eating yogurt?     1.可以放蛮久的,你也可以放入冰箱里, 可以放到你喝完为止,但你如果刻意污染,那又另当别论。
    2.我是主张酿4星期以上或酿到有点酸,让糖份可以比较完整的被利用来发酵;一些朋友只是酿了两个星期就喝,这时候还有些糖份,如果你喜欢甜的话,会觉得很好喝。
    我今天只能带你入门,等你学会以后,你肯定会有自己的意见,到时候可能你不会再照我的方法做,那时候是各自修行了。只要你多注意自己身体的反应,那是最重要的。

    看来你挺识货,黄梨酵素是其中最不错的酵素,其实做法很简单,如果放在食谱里,就好像教人炒青菜,没有卖座力。

    我大姐也是个糖尿病患者 。。。
    她喝的酵素是用小苦瓜 + 番石榴 作成的 。。。
    每 kg 的水果加入一包片糖 (大概400gm)
    我有个马来同事和他姐姐,喝了这酵素,反应也很好 。。。
    他姐姐严重到要打针的,喝了之后,只需要吃药,不用打针了。。。
    这只是我在周边人观察到的现象 。。。 只供你参考 。。。决定权还的由你自己了 。。。

    青 / 黄柠檬都可以用 。。。 只是价钱有别罢了 。。。

    I would like to know A) Is it true that whenever making lassi , I must add some ice cubes to prevent the fruits being oxidized? I prefer to have it for my breakfast but it is not advisable to have cold drinks in the morning, right? B) If both the milk and yogurt which I use to make yogurt are both expired on 30/11, does it means I must finish everything b4 or on that day itself and also I can’t keep this homemade yogurt as the seed for next use? BTW, I have tried my very first trial on making yogurt, it turned out great. Thanks guys!

    Just oxidation, not a problem.

    A)Ice cubes cannot prevent oxidation. you don’t need to add ice cube if you don’t want cold drink in the morning.
    B) The manufacture sell the milk to you and they indicated on the expiry date; you make the yogurt yourself so you decide on the expiry date of the yogurt. So long as you don’t contaminate it, it will last for a while.

    Hi 慧慧,

    a) Adding ice when making lassi is to add “body” to the drink, ie. it will make a more foamy, creamy lassi. Without ice, the lassi is very liquidy. What I normally do is to freeze my fruits (eg. mango or banana pieces) and blend the yogurt or kefir with the frozen fruits without the ice cubes. If you dislike cold drinks, then leave the blended lassi for a few minutes before you drink.

    b) cultured milk contains friendly bacteria that will help to preserve the milk from spoilage. So, even the regular milk has an expiry date, when you cultured it, it will stay edible past the expiry date.

    i too don like cold drink early in the morning … i will take the portion of kefir i need for the breakfast out the nite b4 … n leave it on my kitchen top …
    come the morning … it is not cold anymore … room temparature la … i will blend it with fruit juice of my choice as lassi for my breakfast …
    this method is ideal for kids …

    当有一次我从报章阅读一则报道,是关于一位营养师教导大家如何做酵素。他的制作比率和方法是:水果,蜜糖,清洁的水(3:1:10)和塑胶容器/瓶子。之后发酵三个月,过滤果渣后的酵素让它自然沉淀后再取出来,继续储放陈酿,越陈越香。
    这样的制做方式是否可行得通?在掺水或不掺水的情况下制做酵素,在相比之下,成品和功效有没有差别呢?

    我们也有用环保酵素来浸洗蔬菜水果,比例是1份环保酵素加100份水 。。。

    我也听说过这种做法,制作比率和方法是:水果,蜜糖,清洁的水(3:1:10), 也尝试喝过 。。。
    我个人较喜欢不加水的方式 。。。当然这见人见智 。。。 喜欢就好 。。。 那种做法会比较经济呗 。。。

    如果我用这个方法 。。。 我还是会选用玻璃瓶子 。。。 因为酵素到底是酸性的液体 。。。 可能会和塑胶产生某种化学作用 。。。

    发酵的时间是可以跟着个人的喜好 。。。 2个星期甚至到3个月多有人在采用 。。。
    既然你是第一次作 。。。 那你就跟着 thomas 的方法 。。。 到你可以拜别师傅自己可以下山自立门户为止呗 。。。
    那时候你就可以碎屑所意了 。。。
    用你的眼鼻舌 。。。 你就可以估计你的酵素是否可以收成啦。。。

    凡是发酵的食物都会带有酒精的味道 。。。 只是轻或重而已 。。。
    成功的酵素的色香味应该是 :
    颜色看起来好看清透 。。。 不会污浊
    虽有酒味,不过会有蛮香的果香味
    味道酸酸甜甜的 。。。
